I rarley use anything for my cream puffs, I just grease the cookie sheet with a very little of melted butter. If you use to much they will burn on the bottom. I also work at a fine dining resturant and we do the same, just check on them, start them on 375 for about 7 mins and then take it down to 340 for another ten fifteen.

you have to constanly beat it at a good speed i do it by hand it takes some work but comes out fine if its not forming for you your either not doin it long enough or at a fast enough speed try turning up the speed on the mixer if that doesent work i dont know what your doing wrong sorry hope this helps
